My sweet husband made a delicious lunch for me on Sunday. I had to share what he made for my post this week.
The presentation was of course super creative. I felt like I was in a fancy restaurant....like the one from Ratatouille. :)
Here is what we ate for lunch in case you would like to try it out.
The raw chicken was beaten to death so it was flat and able to be molded and wrapped around cheese and broccoli. Wrapped around the chicken was turkey bacon. Then cooked nicely on the stove. The chicken is leaning against a cup of wild rice mixed with cheddar cheese rice. The tomatoes were my favorite! The way he placed them on the plate reminded me of the women who preformed in the water and usually in 50's movies. He drizzled balsamic vinegar, olive oil, and gorganzola cheese on the tomatoes making them impossible to resist.
My husband creates his perfect bite by adding a piece of each food on his fork. This way he gets the perfect flavor combination.

Chicken Potato Burritos
Chicken Potato Recipe
Few cups of diced red potatoes. Leave those skins on! :)Cook the potatoes in a few tablespoons of olive oil until they are about half way done.
Add in 3 diced chicken breasts
After the potatoes and chicken are nicely cooked add the following:
Paprika
About 1-2 cups of Salsa
Salt and Pepper
CHEESE!!!
Throw this delicious mix into a tortilla and add sour cream to finish it off.

Cream Cheese
My son Sam loves Pancakes. A few mornings ago we made pancakes from a box. I just added a little water to the pancake mix and BING delicious pancakes. Of course we had to add some chocolate chips....however, I was out. Darn. So, I added the next best thing. Butterscotch.
I was pretty sure we were ready to eat, but a tragedy surfaced. We were out of syrup. Well, I could make honey butter as an alternative, but we were out of honey too. My mommy instincts started to churn. I went to the fridge, "what can I put on Sam's pancakes?"
Then, a light turned on. It wasn't just any light, it was a 1000 watt mercury vapor bulb found in a baseball park. I found some cream cheese in the fridge and pulled it out. I put about a fourth of a cup in a mug and added some of my butterscotch chips. I put it in the microwave for a few seconds and viola!
After a quick stir, it was ready to spread on Sam's pancakes and my own. :) The butterscotch chips melted so nicely into the cream cheese and boy was it delicious.
So, I guess I want to say, thank goodness we ran out of syrup.

Ricotta Raspberry "Moose"
Ricotta Raspberry "Moose" Recipe
(Showcased on Giada at Home)
15 oz of Ricotta Cheese
1/2 cup of Raspberry Jam
Mix together in a food processor until nice a smooth.
Mix 1 cup of whipping cream until thick.
Add 2 tbsp of Powdered Sugar
Continue Mixing until the whipping cream is stiff.
Fold into Ricotta mixture.
Put it in your favorite serving dish and let it cool in the fridge for an hour!
Enjoy!!

Summer Salads!!
Tuna Pasta Salad
Throw together 1 box of three color Rotoni noodles & cooked broccoli in a large bowl.2 cups of chopped carrots
1 can of tuna
Few squirts of mustard
1 can of Chick Peas
Generously pour Italian Dressing over Pasta.
Cover and Refrigerate. Enjoy!
Chicken and Fruit Salad
Several cups of Lettuce1 diced Cucumber
2 cups of chopped strawberries
1 diced apple
2 cups of diced cooked chicken
1 cup of cranberries and nuts
Topped with Gorgonzola Cheese.
Add Raspberry Hazelnut dressing to complete.
What fun summer salads and so easy to make. I love it!

Oatmeal Banana Muffins
Thanks to my sweet sister, Amy Harline, for this yummy recipe!
The Recipe for Oatmeal Banana Muffins
2 cups oats
1 1/2 cups brown sugar
2 cups flour
1 tsp salt
2 tsp cinnamon
2 tsp baking powder
1 tsp soda
2 eggs
1 cup oil
2 cups milk
1 cup mashed bananas
Combine dry ingredients in bowl. add egg, oil and mil to dry ingredients. mix until moist. Add bananas.
Bake at 400 degrees for 13-15 min. Make 2 1/2 dozen.

Fun Eggs!

8 Eggs
1/2 Cup of 1/2 & 1/2
Pinch of Salt
Pour egg mixture into greased muffin tin.
Add two tablespoons of any mixture you would like. Ham, cheese, onions, peppers, etc
Cook for 20-25 minutes.
They're best if you eat them with your fingers. :)
